BBQ Meatballs

BBQ Meatballs

Ingredients:

2 pounds ground beef

2 cups oatmeal

1 small onion chopped

2 eggs

8 ounces tomato sauce

3/4 cup ketchup

½ cup brown sugar

2 teaspoons liquid smoke

Instructions:

  1. Preheat your oven to 375 degrees.
  2. Mix the ground beef, oatmeal, chopped onions and eggs (I use my stand mixer).
  3. Once all ingredients blended, form into balls and place in a 9x13 glass casserole dish.
  4. In a separate bowl mix the tomato sauce, ketchup, brown sugar and liquid smoke.
  5. Pour the sauce evenly (or not if you are me) over the meatballs.
  6. Bake for 20-30 minutes. I like to cut a middle one open to be sure they are cooked through. It depends on the size of the meatball on how long it takes to cook.

Note: This recipe is easy to cut in half if you don’t cook for 7 every night, but the meatballs are also fabulous re-heated as leftovers!  Often, I double the recipe and freeze the extra pan for late nights in the tractor 😊 the sauce helps them freeze well so when you bake them they still taste delicious!

 

BBQ Meatballs are always a Goodpasture Family favorite!  The first time made these myself I was a newlywed.  I called my sister and was disappointed that I didn’t have all the ingredients.  The farm is a little more than a hop and a skip from town and the grocery store, so I made them with the ingredients I had on hand.  Guess what?  Ryan liked them better this way.  My mom still insists hers are better.  Both are good, but I’m kinda a less is more girl and I tend to not need more in my grocery cart.  So this isn’t the “family” recipe.  I’ll let my mom keep the secret to why hers are better.  Either way my family loves these as have many of our table guests.  Hope your family enjoys many laughs while you enjoy them at your table!
